Human Health Effects of Gluten
While reading up on celiac disease and gluten free information, I came across some surprising studies that have been done on this issue
I had originally posted the links to the ones I was reading and they included some scientific studies. However, some of the links were not completely safe to follow so I removed them. One was to the complete government study on why Gluten is a Toxin. It is in PDF format, so maybe that is why it wasn't allowed. Anyway, I have included some good informational sites at the bottom, and those are safe to follow.
Even though this information was available in 2012, I did not know about it and I am sure a lot of people diagnosed with Celiac Disease did not know this either. The report is lengthy but it contains some stuff that I think should be out there as general knowledge.
Celiac disease should not be confused with a wheat allergy or gluten intolerance. It is a serious condition and can lead to life long health problems. It is controllable through diet, but there is no cure. The later in life you get a firm diagnoses, the more damage it has done to your small intestine, hence you cannot absorb nutrients properly from the food you eat or the supplements you take by mouth.
And unless you adhere to a strict zero tolerance gluten free diet, the damage continues, the health problems keep getting worse etc. etc. etc. the vicious cycle goes on.
As well as the long term and gradual health issues a celiac faces, there is also the fear of the unexpected attack by being glutenized. (A term made up by us celiac's) These attacks are different for different people, but can range from mild discomfort to life threatening.
My own attacks have been somewhat severe in nature, maybe because I am older and already have a few problems. One being I take an aspirin everyday as the result of a mild stroke. Aspirin is a gluten antagonist.
